Update

Getting to the end of our Brewmania stash and ready to start again with VIGOR!  First one is one of the easiest we've ever brewed the Aussie Sparkling Ale.  Contains 4 ingredients.  4.  Awesome.  Bottle scheduled for Wed 4/10.

  1. The Koala (Aussie) came out tasting just like the liquid malt ... which is to say yummy. I know this because I snagged a few spoonful's of malt during the brew process. It has a slight astringent taste which was already apparent in the malt's hop characteristics ( it came pre hopped). While slightly astringent tasting, these hops also contributed a mild candy grape note at the finish. The extra 0.3 Kg of malt that I added ( less I throw away some malt) also gives this unique Ausse a boost in it's alcohol content, which is never bad, except for I do think it overpowered up the finishing hops. I started and held the fermentation at 64 deg and I think a higher brewing temperature ( at least at the start) would have allowed for a better flavor profile from the yeast. Overall I'd say this is a rather unique beer as it does not really taste like any beer I am familiar with. But other than that, I'd give it a B- grade for doing nothing more.

  2. Update: Last night I tried another Koala. With a little age and some time in the refrigerator, the flavor has mellowed out. The general flavor has changed from astringent to a tangy bread like taste. I think the beer now deserves a B grade.
